Initial value set up

Let say i have a temperature field, T, which i need to solve. I have the temperature value on every mesh point for the initial value of T, but i don't have the function which describe the values. For 1D cases i can use interpolation function, but what about for 2D cases? What would be the best way to set up the initial value in this case? Could i use Matlab for this purpose? The data i have is in matrix form.
