Unexpected values from interpolation function

I used interpolation function with a parametric surface to generate geometry as shown in example rock_fracture_flow_3d_42.mph. My elevations (z) varies from 0- 80. But the surface I get (using linear interpolation function) varies from 0 -40. What happened to the peaks in my data?. (they are not isolated peaks; they have surrounding points well over 50). Even if I use nearest neighbour for interpolation, I don't get elevations greater than 50 in the parametric surface. Any idea why this happens??
