Since the invention of laser sources, understanding the interaction between the laser and biological tissues is a subject of great importance because of their medical applications in particular for diagnostic purposes. They recently found a growing interest in the sector of the arboriculture to check the fruits quality in a non-destructive way. In this work, we study the interaction between the laser and tissues of apples using different approaches. We establish a FEM model using COMSOL. The outcomes are compared to an analytic solution and an experimental set of data obtained for different varieties of apples.
